Why do children have a seemingly innate aversion to solid vegetables?

Children are more sensitive to bitter tastes because a lot of poisonous plants taste bitter, as you become older you become less sensitive to it, and can taste the more subtle planty-spicey-warm taste in some veggies.

Check your vegetable puree, it may have added sugar of some sort in it.  Kids are more sensitive to sugar because the parts of plants that they want eaten tend to be sweet. (They want their fruit eaten and spread, so most fruit is sweet, while their leaves and stems taste bitter/spicy to dissuade being eaten.)

Fun fact:  Peppers aren’t spicy to birds, because peppers evolved their spice to dissuade mammals from eating them because birds propagate their seeds further than mammals can.
